Red, White and Blue Ice Cream Sandwiches

"Patriotic fruit sandwich with chocolate fudge cake mix - simple, refreshing, and delicious!"
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Chocolate Fudge Cake Mix
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 quarts vanilla ice cream, slightly softened
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups chopped fresh strawberries
Instructions:
  • Preheat your oven to 350°F. Prepare your 18x12-inch half-sheet pan by greasing it with shortening, cooking spray, or lining it with cooking parchment paper.
  • In a medium bowl, mix together the cake mix, butter, vanilla, and eggs until combined (the batter will be thick). Spread the batter in the pan, using greased hands if needed to spread it evenly. Bake for 12 minutes or until the top is set but still slightly soft. Allow it to cool completely in the pan on a cooling rack.
  • Line a 12x9-inch pan with cooking parchment or waxed paper. Mix together ice cream, blueberries, and strawberries in a large bowl. Spread the mixture in the pan and freeze until firm, approximately 2 hours.
  • Slice the cake into 24 (3-inch) squares and the ice cream into 12 (3-inch) squares. Create ice cream sandwiches by layering one ice cream square between two cake squares. Enjoy right away or wrap them individually in plastic wrap or foil and freeze for later.
