Red, White and Blue Brownie Ice Cream Sandwiches

Indulgent fudgy brownie ice cream sandwiches with colorful sprinkles.
Ingredients:
  • Water, vegetable oil and eggs called for on box for cakelike brownies
  • 1 1/2 cups ice cream, any flavor
  • 3 tablespoons Betty Crocker™ red, white and blue candy sprinkles
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan) and line 12 regular-size muffin cups with foil baking cups.
  • Prepare the brownie batter following the instructions on the box for a cakelike texture. Divide the batter evenly into muffin cups, filling each about 2/3 full.
  • Bake for 28 to 32 minutes or until a toothpick inserted in the center comes out almost clean. Allow to cool for 5 minutes, then remove from pan onto a cooling rack. Let it cool completely, about 45 minutes.
  • Remove the baking cups from the brownies. Cut the brownies in half horizontally with a serrated knife. Sandwich 1 scoop (about 2 tablespoons) of ice cream between the brownie halves. Dip the sides of the ice cream sandwiches in candy sprinkles placed in a shallow bowl. Freeze for at least 1 hour before serving, and store covered in the freezer.
