Warm white chocolate pavlova with berries

Winter berry pavlova: a cozy twist on a classic dessert for the whole family to enjoy.
Ingredients:
  • 6 egg whites
  • 430.00 gm caster sugar
  • 4.40 gm vanilla extract
  • 1 tsp white vinegar
  • 5.00 gm cornflour
  • 150g white chocolate chips, finely chopped
  • 300g frozen mixed berries
  • 250g punnet strawberries, sliced, plus extra small strawberries to serve
  • 600ml thickened cream, whipped
  • Small fresh mint leaves, to serve
Instructions:
  • Preheat your oven to 140C/120C fan-forced. Grease a large baking tray and lay a sheet of baking paper marked with an 18cm x 30cm rectangle on it, marked-side down.
  • With an electric mixer, whip egg whites until soft peaks form. Gradually add 1 2/3 cups of sugar, 1 tablespoon at a time, beating thoroughly after each addition until sugar dissolves. Mix in vanilla, vinegar, and cornflour, and beat for 1 minute. Gently stir in chocolate chips. Spoon mixture onto the prepared tray, use the marked rectangle as a guide. Use a spatula to spread the mixture, with slightly higher sides than the center.
  • Bake the pavlova for 1 hour or until firm. Turn off the oven and let the pavlova stand in the oven with the door slightly open for 30 minutes.
  • In a small saucepan over low heat, combine mixed berries, the remaining sugar, and 1/2 cup of water. Stir for 2 minutes until the sugar is dissolved. Use a slotted spoon to transfer the berries to a bowl and let them cool. Increase the heat to medium-high, bring the berry syrup to a boil, and boil for 5 minutes until slightly thickened. Allow it to cool for 10 minutes before using.
  • Transfer the berry juice into the syrup. Place the warm pavlova on a serving plate. Add half of the strawberries and half of the mixed berries on top. Spoon cream over the pavlova. Drizzle with the berry syrup and garnish with the remaining strawberries, mixed berries, small strawberries, and mint. Serve promptly.
