Delectable white chocolate, fig, and hazelnut warm puddings for a crowd-pleasing treat.
Ingredients:
  • 150g dried whole figs
  • 125.00 ml strongly-brewed espresso coffee
  • 40.00 ml coffee liqueur (such as Kahlua or Tia Maria)
  • 150.00 gm pure icing sugar
  • 75.00 gm self-raising flour
  • 100.00 gm hazelnut meal (ground hazelnuts)
  • 4 eggwhites
  • 100g butter, melted
  • 100g good-quality white chocolate, grated
  • 40.00 gm caster sugar
  • vanilla ice-cream, to serve
Instructions:
  • Mix together luscious figs, rich coffee, and fragrant liqueur in a bowl. Chill in the refrigerator for at least 3 hours, or ideally overnight for enhanced flavors.
  • 1. Preheat your oven to 180°C and grease six 3/4-cup capacity Texas muffin holes. 2. Sift icing sugar and flour into a large bowl, then mix in hazelnut meal. 3. Create a well in the center and gradually incorporate the egg whites, stirring constantly until well combined. 4. Add the butter and stir until well mixed, then fold in the chocolate.
  • Strain figs, keeping the coffee mixture. Halve figs and place them on muffin bases. Pour chocolate batter over figs. Bake for 25 minutes or until a skewer comes out clean. Cool in pan for 10 minutes, then transfer to wire rack.
  • Combine the coffee mixture and caster sugar in a saucepan and bring to a boil. Simmer over medium-low heat for 5 minutes until slightly thickened.
  • Present the warm puddings on plates, generously add a scoop of ice-cream, and elegantly drizzle with coffee sauce before serving.
