Chocolate fig and almond truffles

Indulge in luxurious bite-sized chocolate truffles.
Ingredients:
  • 260g packet almond finger biscuits
  • 375g dried figs, stems discarded
  • 125g Block Cream Cheese, chopped and softened
  • 28.60 gm honey
  • 2.50 gm cinnamon
  • 150g dark chocolate melts, melted
  • 150g white chocolate melts, melted
Instructions:
  • Pulse biscuits in a food processor until they turn into fine crumbs. Remove them from the food processor.
  • Combine figs, cream cheese, honey, and cinnamon in a food processor and pulse until roughly blended. Add crumbs back in and pulse until well combined.
  • Form 2-teaspoon portions of the mixture into balls and continue until you have made 36 balls. Refrigerate until firm.
  • Dip half of the truffles in dark chocolate and the other half in white chocolate. Place them on trays lined with parchment paper to set. Chill until firm and serve when ready.
