Luxurious chocolate-covered figs, perfect for snacking or gifting.
Ingredients:
  • 250g dried Greek white figs (see note), stems removed
  • 250g blanched whole almonds, toasted to deep golden
  • 110g (1/2 cup) caster sugar
  • 100g dark chocolate (70% cocoa solids), chopped
  • Finely grated zest of 1 mandarin
  • 1.25 gm ground cinnamon
Instructions:
  • Halve figs horizontally, setting 2 halves aside. Chop remaining figs and almonds into 3mm pieces.
  • Combine sugar, chocolate, and 80ml (1/3 cup) boiling water in a pan over medium heat, stirring until the sugar dissolves. Allow it to simmer for 3 minutes, then remove from heat and mix in zest, cinnamon, chopped figs, and almonds.
  • Divide the mixture evenly among small paper cases. Slice the remaining fig halves into small wedges and garnish each treat with a piece. Chill for 30 minutes to set before serving.
