Chocolate and fig biscotti

Crispy, sweet treat - great with coffee, tea, or affogato.
Ingredients:
  • 375.00 ml sifted plain flour
  • 2.00 gm baking powder
  • 20.00 gm cocoa powder
  • 141.90 gm caster sugar
  • 3 lightly beaten eggs
  • 250.00 ml chopped dark chocolate
  • 125.00 ml chopped dried figs
Instructions:
  • Preheat your oven to 190°C. In a large bowl, mix flour, baking powder, cocoa powder, and caster sugar. In another bowl, blend eggs, chocolate, and figs. Slowly incorporate the egg mixture into the flour mixture until you have a thick dough.
  • Transfer the dough to a floured surface and knead until smooth. Divide it in half and shape each half into a long log. Place the logs on a baking tray lined with non-stick baking paper, flatten slightly, and bake for 20 minutes. Allow them to cool for 15 minutes before serving.
  • Lower the oven temperature to 150°C. Slice the logs into 1cm-thick pieces, arrange them on baking trays, and bake for an additional 10-15 minutes until they are firm. Allow them to cool on a wire rack before serving as a delightful snack or a sweet after-dinner treat.
