Decadent chocolate and fig biscotti with a hint of cinnamon.
Ingredients:
  • 3.25 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 cup butter, softened
  • 0.75 cup light brown sugar
  • 0.25 cup white sugar
  • 7 egg whites, divided
  • 0.75 cup chocolate chips, or more to taste
  • 1 cup chopped dried figs
  • 1 pinch ground cinnamon
Instructions:
  • Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
  • In a bowl, mix together the flour and baking powder.
  • In a separate bowl, cream together butter, brown sugar, and white sugar until fluffy using an electric mixer. Beat in the egg whites one at a time. Mix in chocolate chips and vanilla extract. Gently fold in the flour mixture until smooth, then carefully stir in the figs.
  • Divide the dough in half. Shape each half into a 12-inch-long and 2-inch-wide loaf. Space the loaves 4 inches apart on the baking sheet and gently flatten the tops. Whip the remaining egg white until frothy and brush it over the loaves. Lightly dust the loaves with cinnamon after brushing on the egg white.
  • Bake in the preheated oven until golden brown, for about 20 to 25 minutes. Allow to cool for approximately 30 minutes.
  • Reduce oven temperature to 325°F (165°C) for optimal cooking results.
  • Slice the baked loaves into 1/2-inch-thick diagonal cuts using a serrated knife, then arrange the slices with the cut side down on a baking sheet.
  • Bake in the preheated oven until golden brown and crispy, approximately 10 minutes. Allow to cool on a wire rack.
