Strawberry meringues

Create heavenly strawberry meringues drizzled with white chocolate sauce.
Ingredients:
  • 2 Brand free range eggs (whites only)
  • 100g caster sugar
  • 4.40 gm vanilla essence
  • 100g white chocolate, chopped
  • 126.25 gm thickened cream
  • 500g strawberries
  • 6.00 gm icing sugar
Instructions:
  • Preheat the oven to 130C (110C fan). Line 2 baking trays with non-stick baking paper. Use electric beaters to whip the egg whites until soft peaks form. Gradually add the sugar, beating thoroughly after each addition. Mix in the vanilla extract.
  • Place dollops of the mixture on the trays and shape into four 8cm rounds, creating a small indent in each meringue with the back of a spoon. Bake for 1 hour, switching trays halfway through. Once done, turn off the oven, crack the door open, and let the meringues cool completely inside.
  • In a heatproof bowl, melt the chocolate with the cream over simmering water until just soft. Remove from heat and stir until smooth. Chill in the refrigerator for about 45 minutes until thickened. Then, whip with electric beaters until creamy like whipped cream.
  • Begin by dicing the strawberries and reserve half for later use. Blend the remaining strawberries in a food processor with the icing sugar until a smooth consistency is achieved. Fill the meringues with the cream mixture, add the reserved chopped strawberries on top, and finish by drizzling the sauce over the dessert.
