Strawberry mousse meringues

Delicious chilled dessert: Mini meringues filled with creamy strawberry mousse.
Ingredients:
  • 350g strawberries, hulled
  • 40g icing sugar
  • 20.00 gm boiling water
  • 6.00 gm gelatine powder
  • 1 Free Range Egg white
  • 185ml thickened cream
  • 75g pkt Make at Home Petite Meringues
  • Mint leaves, to decorate
Instructions:
  • Put the strawberries and sugar in a blender or food processor and blend until smooth. Strain the mixture into a bowl using a sieve to remove the seeds. Store half of the strawberry puree in the fridge for later use.
  • Pour the boiling water into a small heatproof jug. Add the gelatine and stir with a fork until dissolved. Mix the gelatine mixture into the rest of the strawberry puree in the bowl.
  • Beat the egg white with an electric mixer until soft peaks form. Combine whipped cream with gelatine mixture, then gently fold in the egg white. Chill in the fridge for 3 hours.
  • Fill the meringues with the strawberry mousse using a spoon or piping bag. Drizzle with the remaining strawberry puree and garnish with fresh mint leaves before serving.
