Strawberry Mousse with White Chocolate

Indulge in a luscious strawberry mousse with fresh strawberries, cream, gelatin, sugar, lemon juice, and white chocolate. A delectable make-ahead treat!
Ingredients:
  • 1 1/2 pounds strawberries
  • 2 tablespoons fresh lemon juice, divided
  • 8 ounces white chocolate, finely chopped
  • 1 1/4 teaspoon unflavored gelatin (about half a small envelope)
  • 2 cups heavy cream
  • 2 tablespoons powdered (confectioner's) sugar
Instructions:
  • Prepare the strawberry purée by cleaning and removing the hulls from 3/4 pound of strawberries. Quarter half of the strawberries and blend them until smooth. Strain the mixture through a sieve into a bowl. Finish with 1 cup of purée, then mix in 1 tablespoon of lemon juice. Your strawberry purée is ready to use.
  • Slice the remaining 3/4 pound of berries to fill 2 cups, and set aside.
  • Melt the white chocolate: In a double boiler or a stainless steel bowl set over simmering water (avoid water touching the bowl), melt the white chocolate until smooth. Stand-by.
  • Prepare the gelatin: In a small bowl, add 1/4 cup of cold water. Sprinkle the gelatin powder over the water and allow it to sit for 5 minutes until softened.
  • Combine gelatin mixture with warm cream and powdered sugar: Heat 1/4 cup of cream in a small saucepan over medium heat. Whisk in 2 tablespoons of powdered sugar and bring to a simmer. Stir in the water-gelatin mixture until fully dissolved.
  • Mix the melted chocolate with the melted white chocolate in a bowl until smooth.
  • Gently fold in 3/4 cup of the smooth strawberry mixture, setting aside the remaining 1/4 cup for later use.
  • Create delicious whipped cream: Utilizing an electric mixer with the whisk attachment, whip the cold remaining 1 3/4 cups of cream on medium-high speed until medium peaks form.
  • Gently fold a third of the whipped cream into the chocolate mixture, then carefully fold in the rest. Chill the mixture in the refrigerator for 1 hour.
  • Enhance mousse with strawberries: Combine reserved sliced berries with 1 tablespoon lemon juice, then gently fold into the mousse.
  • Spoon the fluffy mousse into serving cups and chill in the refrigerator for at least an hour, or preferably longer, even overnight. Cover with plastic wrap before refrigerating.
  • Before serving, spoon a dollop of the reserved strawberry purée onto each mousse serving and garnish with strawberry slices.
