Vanilla and fresh fruit pavlova

Indulge in a summery pavlova adorned with vibrant fresh fruits and berries.
Ingredients:
  • 4 egg whites
  • 220g caster sugar
  • 1 vanilla bean, halved lengthways
  • Pinch of cream of tartar
  • 200ml thickened cream
  • 250g strawberries, washed, hulled, halved
  • 2 kiwifruit, peeled, sliced
  • 2 passionfruit, halved
Instructions:
  • Preheat your oven to 150°C. Trace a 20cm circle on a sheet of non-stick baking paper and place it ink-side down on a baking tray.
  • Beat egg whites in a clean, large bowl with an electric beater until firm peaks form. Gradually add sugar, beating well after each addition until sugar dissolves. Add vanilla bean seeds and cream of tartar to the meringue. Beat until smooth and glossy.
  • Smooth the luscious meringue mixture within the circle on the tray. Bake for a blissful 50 minutes. After baking, gently close the oven door, leaving it slightly ajar to allow the sweet treat to cool to perfection.
  • Beat the cream with electric beaters until soft peaks form. Spread it over the pavlova, then top with strawberries and kiwifruit. Drizzle with passionfruit pulp before serving.
