Apple-cinnamon pancakes

Delicious apple-cinnamon pancakes paired with creamy vanilla yogurt and fresh blueberries.
Ingredients:
  • 300.00 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • 2 tsp cinnamon sugar
  • 70.95 gm caster sugar
  • 520.00 gm buttermilk
  • 8.80 gm vanilla extract
  • 1 egg, lightly beaten
  • 1 granny smith apple, peeled, grated
  • 25g butter, melted
  • Vanilla yoghurt, blueberries and
  • Cinnamon sugar, to serve
Instructions:
  • Sift the flour and bicarbonate of soda into a bowl, then stir in the cinnamon sugar and caster sugar, creating a well in the center.
  • In a jug, combine buttermilk, vanilla, and egg, whisking together. Pour the mixture into the flour mixture and stir until combined. Gently fold in the apple until just mixed.
  • Preheat a non-stick frying pan over medium heat and brush it with butter. Spoon 1/4 cup of batter into the pan and spread it evenly in a round shape. Cook for 3 to 4 minutes until bubbles form on the surface, then flip and cook for another 3 to 4 minutes until golden. Transfer the pancake to a plate and cover loosely with foil to keep warm. Repeat with the rest of the batter, brushing the pan with butter as needed.
  • Finish off the pancakes with a dollop of creamy yogurt and a handful of juicy blueberries, then dust with aromatic cinnamon sugar before serving.
