Fluffy apple cinnamon pancakes bursting with freshly grated tart apples, ideal for a cozy brunch.
Ingredients:
  • 1 cup shredded tart apple
  • 1 cup milk
  • 0.25 cup butter, melted
  • 1 large egg
  • 1.25 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1.25 teaspoons baking powder
Instructions:
  • In a large bowl, mix together apple, milk, butter, and egg. In a separate bowl, sift together flour, sugar, baking powder, and cinnamon. Gently stir the flour mixture into the apple mixture until just combined.
  • Preheat a greased griddle or frying pan over medium-high heat.
  • Spoon 1/4 cup of batter onto the hot griddle, cook until lightly browned underneath, flip, and cook until browned on the other side. Repeat with the rest of the batter.
