Apple pancakes with Bisquick® mix and maple syrup.
Ingredients:
  • 3 tablespoons butter or margarine
  • 4 medium cooking apples, peeled, thinly sliced (about 6 cups)
  • 1/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups Original Bisquick™ mix
  • 1/4 cup granulated sugar
  • 1 cup buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 tablespoon cinnamon-sugar
  • Maple-flavored syrup, if desired
Instructions:
  • Preheat the oven to 450°F. Melt butter in a 10-inch ovenproof or cast-iron skillet in the oven, which should take about 2 minutes. Add apples, brown sugar, and cinnamon, toss to coat, and bake for 2 minutes. Stir, then bake for another 3 minutes. Lower the oven temperature to 400°F.
  • In a spacious bowl, vigorously mix together Bisquick mix, granulated sugar, buttermilk, lemon juice, vanilla, and eggs until combined. Pour the mixture over the apples.
  • Bake for 25-30 minutes until golden brown. Sprinkle with cinnamon-sugar, cut into wedges, drizzle with syrup, and serve immediately.
