Apple pancakes topped with fresh kiwifruit - a fruity and delightful way to kickstart your morning!
Ingredients:
  • 75.00 gm self-raising flour, sifted
  • 40.00 gm caster sugar
  • 1.25 gm ground cinnamon
  • 1 egg, lightly whisked
  • 84.98 gm milk
  • 2 granny smith apples, peeled, grated
  • Canola oil cooking spray
  • 2 kiwifruit, peeled, thinly sliced
  • 4 scoops low-fat frozen yoghurt, to serve
Instructions:
  • In a bowl, mix together flour, sugar, and cinnamon. Add eggs and milk, whisk until smooth, then gently fold in apples.
  • 1. Preheat a non-stick frying pan over low heat and lightly coat with oil. 2. Pour 1/4 cup of apple mixture into the pan and use the back of a spoon to gently spread it into a 10cm round shape. 3. Cook the pancakes in batches for 2 minutes until bubbles form on the surface. 4. Flip the pancakes and cook for an additional 1 to 2 minutes until they are fully cooked.
  • Garnish with fresh kiwifruit slices and a scoop of frozen yogurt.
