Apple caramel pancakes topped with walnuts, ideal for a decadent brunch.
Ingredients:
  • 1 large apple - peeled, cored, and diced
  • 2 tablespoons water
  • 1 cup brown sugar
  • 0.5 cup heavy cream
  • 5 tablespoons unsalted butter, cubed
  • 0.125 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1.6666667461395 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons white sugar
  • 0.5 teaspoon salt
  • 2 large eggs
  • 1.25 cups milk
  • 2 tablespoons unsalted butter, melted
  • 0.5 cup chopped, toasted walnuts
Instructions:
  • In a microwave-safe dish, mix diced apples with water for the sauce. Cover and microwave on high for 3 minutes. Stir well, cover again, and microwave until apples are fork-tender, for about 2 more minutes. Drain and set aside.
  • In a 2-quart saucepan, melt brown sugar, cream, butter, and salt over medium-low heat until boiling. Stir occasionally for 5 to 7 minutes until bubbly. Add vanilla extract and stir for another 2 minutes. Take off heat and fold in cooked, drained apples.
  • Preheat the electric griddle to 250 degrees F (120 degrees C) and lightly grease it.
  • In a bowl, mix together flour, baking powder, sugar, and salt.
  • In a separate bowl, vigorously whisk together eggs and milk until well combined. Slowly pour in melted butter while stirring constantly. Combine the wet mixture with the dry ingredients, stirring until smooth with minimal lumps.
  • Pour the batter in batches onto the preheated griddle using a 1/4-cup measuring cup to make 6-inch pancakes.
  • Cook the pancakes until bubbles form on top and the surface looks slightly dry, 3 to 4 minutes. Flip and cook to your preferred level of brownness, 2 to 3 minutes. Keep the first batch warm in a 250°F (120°C) oven while cooking the rest of the pancakes.
  • Plate 3 pancakes topped with caramelized apple sauce and finish with a sprinkle of chopped toasted walnuts for a delightful presentation.
