Whip up quick, decadent apple pancakes in 10 minutes.
Ingredients:
  • 3 pink lady apples (see Notes)
  • 30g butter
  • 8.00 gm brown sugar
  • 325g bottle buttermilk pancake shake (see Notes)
  • 15g butter, melted, extra
  • 2.50 gm ground cinnamon
  • 32.00 gm brown sugar, extra
  • 82.50 ml honey-roasted almonds, roughly chopped
  • Vanilla ice-cream, to serve
Instructions:
  • Prepare the apples by halving, quartering, and coring them before cutting into thin slices. In a large nonstick frying pan over medium-high heat, melt the butter. Add the apple slices and cook for about 2 minutes until they are just tender and golden, stirring occasionally. Transfer the cooked apples to a plate, sprinkle with sugar, and wipe the pan clean.
  • Shake the pancake bottle well to mix the ingredients. Prepare the batter following the instructions on the packet, shaking vigorously until it's smooth.
  • Heat the frying pan over medium heat, then brush with melted butter. Pour ¼ cup of pancake batter into the pan and spread to form a 10cm round. Make another pancake the same way. Top both pancakes with apple slices. Cook each side for 1 to 2 minutes until golden and cooked through. Carefully turn them over and then transfer to a plate.
  • Coat pan with butter again. Pour another portion of batter and apple mixture to create 2 additional pancakes.
  • In a bowl, mix cinnamon, extra sugar, and almonds. Top pancakes with the remaining apple mixture, ice cream, and almond crumble. Serve.
