Frozen strawberry and meringue parfait topped with toasted walnuts. Divine and effortless treat!
Ingredients:
  • 0.5 cup chopped walnuts
  • 1 cup all-purpose flour
  • 0.25 cup brown sugar
  • 0.5 cup melted butter or margarine
  • 2 egg whites
  • 1 cup white sugar
  • 2 cups sliced strawberries
  • 2 tablespoons lemon juice
  • 1 cup whipped cream
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine the flour, brown sugar, walnuts, and melted butter in a bowl until well mixed. Transfer the mixture to a baking sheet and bake in a preheated oven for 20 minutes until crispy. Allow it to cool completely before enjoying.
  • Whip egg whites until they form stiff peaks, gradually adding sugar. Mix strawberries with lemon juice, then gently fold into the egg whites until pink. Gently blend in whipped cream until smooth.
  • Crumble the walnut mixture and spread 2/3 evenly in a 9x13 inch dish. Top with the strawberry mixture and sprinkle the remaining crumbs. Freeze for two hours until firm. Allow to sit at room temperature briefly before serving for easier slicing.
