Frozen strawberry fluff on a nutty crust, perfect for a refreshing summer dessert.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.5 cup butter, melted
  • 2 egg whites
  • 2 cups sliced strawberries
  • 2 tablespoons lemon juice
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Prepare a baking sheet with aluminum foil. Combine flour, brown sugar, walnuts, and melted butter in a bowl. Toast in the oven for about 15 minutes until walnuts are fragrant, stirring occasionally. Spread 2/3 of the walnut mixture evenly in a 9x13 inch dish.
  • In a large bowl, whip egg whites and lemon juice until soft peaks form. Gradually add white sugar while whipping to firm peaks. Gently fold in the strawberries.
  • In a separate bowl, use an electric mixer to whip the cream until it forms stiff peaks without being grainy. Gently fold it into the strawberry mixture. Spoon the mixture over the crust in the dish, spreading it evenly. Sprinkle the remaining walnut mixture on top. Freeze for at least 6 hours, or overnight.
