Generational Italian taralli recipe, simple to make, perfect for gatherings or holiday gifts.
Ingredients:
  • 1.5 cups warm water, or as needed
  • 1 teaspoon active dry yeast
  • 7 cups all-purpose flour (such as King Arthur®)
  • 7 fluid ounces Chablis wine
  • 7 ounces olive oil
  • 1.5 tablespoons fennel seeds, or more to taste
  • 1.5 tablespoons salt
Instructions:
  • Combine yeast with warm water in a bowl until dissolved.
  • In a large stand mixer with a dough hook attachment, mix together flour, wine, oil, fennel seeds, and salt until well combined. Knead on low speed while slowly adding the yeast mixture. Mix until a smooth ball of dough forms and pulls away from the sides of the bowl, about 3 to 5 minutes.
  • Take the dough out of the bowl and shape it into a smooth ball. Wrap it in plastic wrap and allow it to rest for 4 to 5 minutes.
  • Place a large pot on high heat until water reaches a rolling boil.
  • Divide the dough into 2-inch pieces and shape each into 1/2-inch diameter tubes. Slice the tubes lengthwise into 1/4-inch pieces. Roll each piece from the center outward and fold the ends together.
  • Add taralli to a pot of boiling water in batches of 10. Cook until they float to the surface, approximately 1 minute. Use a slotted spoon to transfer them out. Repeat with the rest of the taralli. Allow them to air dry for 4 hours.
  • Preheat the oven to 400°F (200°C) and line baking sheets with dried taralli.
  • Bake in a preheated oven, flipping occasionally, until beautifully golden, for 20 to 30 minutes.
