Artichokes stuffed with breadcrumbs and simmered in white wine sauce, an authentic Italian dish.
Ingredients:
  • 2 large whole artichokes
  • 1 cup Italian-seasoned bread crumbs (such as Vigo®)
  • 0.5 cup minced pecorino Romano cheese
  • 0.25 cup chopped fresh mint
  • 2 tablespoons minced fresh garlic
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons extra-virgin olive oil
  • 2 cups white wine
  • 1 cup water, or as needed
Instructions:
  • Prepare the artichokes by trimming the stems and tops, removing tough outer leaves, snipping thorns off the remaining leaves, peeling the stems, and cutting them in half. Set aside.
  • In a bowl, mix bread crumbs, pecorino Romano cheese, fresh mint, garlic, salt, and pepper. Drizzle with olive oil and combine thoroughly.
  • Using your thumbs, gently open the artichoke leaves. Fill the bread crumb mixture between the leaves and in the center. Repeat with the second artichoke.
  • In a large pan with a tight-fitting lid, gently nestle artichokes and stem pieces. Pour in wine and water without wetting the artichokes. Cover and bring to a boil, then simmer until an outer leaf can be easily pulled off, approximately 1 hour.
