Tomato, pesto and mozzarella calzone recipe

Easily create a delicious calzone at home without needing Nonna's help!
Ingredients:
  • 450g self-raising flour
  • 840g yoghurt
  • 250g vine-ripened cherry tomatoes
  • 135g mozzarella
  • 130g pesto
Instructions:
  • In a large bowl, combine the flour and yogurt until a soft dough forms. Transfer the dough to a lightly floured surface and knead gently until smooth. Divide the dough into 4 equal portions.
  • Slice most of the tomatoes into thick pieces. Roll out one portion of dough between two sheets of baking paper into a 15cm disc. Sprinkle with ⅓ cup (35g) mozzarella cheese. Place a quarter of the sliced tomatoes on one side of the disc and add 1 tablespoon of pesto on top. Fold the dough over the filling and press the edges to seal. Repeat the process with the rest of the dough, mozzarella, sliced tomatoes, and 3 tablespoons of pesto.
  • Preheat a large non-stick frying pan over medium heat and lightly coat it with olive oil spray. Cook each calzone for 3 minutes on each side in 4 batches, or until golden brown and fully cooked.
  • Cut the leftover tomato into wedges, then top the calzone with the tomato wedges and the rest of the pesto before serving.
