Indulge in a vibrant summer tart bursting with fresh basil pesto, creamy mozzarella, and colorful heirloom tomatoes.
Ingredients:
  • 1.6666667461395 cups sifted all-purpose flour
  • 7 tablespoons cold butter, diced
  • 2 teaspoons water
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 cup pesto, or as needed
  • 1 (8 ounce) ball fresh mozzarella cheese
  • 2 cups heirloom cherry tomatoes, halved
  • 1 pinch coarse sea salt to taste
Instructions:
  • In a bowl, create a well in the center of the flour. Add in butter, egg, water, salt, and sugar. Use your fingertips to blend the ingredients until they resemble bread crumbs. Knead until smooth, shaping the dough into a ball by pushing with the palm of your hand. Wrap in plastic wrap and chill in the fridge for approximately 30 minutes.
  • Roll the dough into a large round on a floured surface, then transfer it to a tart pan by rolling it over the pin. Press the dough into the pan, trim the edges, and chill for 30 minutes before using.
  • Preheat your oven to 400°F (200°C) for a perfect start to your culinary masterpiece.
  • Poke the crust with a fork, then cover with waxed paper and fill with pie weights or dried beans.
  • Prebake the crust in the preheated oven for 8 to 10 minutes until partially cooked. Remove weights and waxed paper, then bake for an additional 5 minutes. Allow the crust to cool while keeping the oven on.
  • Thinly coat the crust with flavorful pesto. Scatter broken pieces of mozzarella over the pesto. Layer with juicy tomatoes.
  • Place the tantalizing tart back in the oven, allowing the juicy tomatoes to become tender and the cheese to reach a melty perfection, which should take around 10 minutes. Sprinkle with sea salt to elevate the flavors before indulging in this delightful dish.
