Colorful heirloom tomatoes elevate this delicious tart to a whole new level!
Ingredients:
  • 6 sheets frozen puff pastry, thawed
  • 250g mascarpone cheese
  • 50g parmesan
  • 2 garlic cloves, finely chopped
  • 40.00 ml finely chopped basil, plus leaves to serve
  • 6-8 brightly coloured heirloom tomatoes (see note) (such as ox heart, yellow, kumato and green zebra or vine-ripened tomatoes), halved, quartered or sliced
  • Olive oil, to drizzle
Instructions:
  • Cut a 15cm circle from each pastry sheet and place them on 2 baking paper-lined trays. Use a fork to prick the pastry all over, then chill for 30 minutes.
  • Preheat your oven to 180°C.
  • Cover the pastry with another sheet of baking paper and use a second tray to press down gently. Bake for 8 minutes or until golden and crispy. Allow to cool completely before using.
  • In a bowl, mix mascarpone, parmesan, garlic, and chopped basil, then season generously with sea salt and freshly ground black pepper. Spread this flavorful cheese mixture over the cooled pastry bases. Top with whole basil leaves and tomato, season to your liking, and finish with a drizzle of olive oil. Enjoy right away.
