Savory North African beef stew with potatoes and tomatoes - perfect for cozy winter nights.
Ingredients:
  • 2.25 pounds beef stew meat, cut into 3/4-inch cubes
  • 2 onions, roughly chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons harissa
  • water to cover
  • 2 potatoes, chopped
  • 1 (14.5 ounce) can chopped tomatoes
Instructions:
  • Brown beef in a stockpot over medium heat for 5 to 7 minutes. Add onions and garlic; cook until onions are softened, about 5 to 10 minutes. Mix in harissa until coated; cook for 2 minutes. Season with salt and pepper.
  • Cover beef with water and bring to a boil. Add potatoes and tomatoes to the stew. Simmer on medium-low heat until beef and potatoes are tender, about 2 to 3 hours.
