Northern-style lasagne with spinach

Elevate classic comfort food with the addition of fresh, vibrant English spinach.
Ingredients:
  • 2 garlic cloves, finely chopped
  • 500g pork and veal mince
  • 2 tsp chopped fresh rosemary leaves
  • 510.00 gm chicken style liquid stock
  • 30g butter
  • 82.50 ml plain flour
  • 386.25 gm milk
  • 1 large bunch English spinach, trimmed, roughly chopped
  • 6 large dried instant lasagne sheets
  • 375.00 ml pizza cheese
  • 187.50 gm warm water
Instructions:
  • In a large frying pan over medium-high heat, heat oil, and sauté garlic until fragrant, around 30 seconds. Add the mince and cook for 5 minutes, breaking it up with a wooden spoon until browned. Stir in rosemary and stock, then simmer for 40 minutes until the liquid reduces. Season with pepper and let cool slightly.
  • Melt butter in a saucepan over medium-high heat. Add flour and cook, stirring, until mixture bubbles, about 2 minutes. Gradually stir in milk and cook for 5 minutes until sauce thickens. Remove from heat, season with salt and white pepper, and stir 1/4 cup of the sauce into the meat mixture. Set aside.
  • Place fresh spinach in a microwave-safe dish. Microwave on HIGH for 3 minutes until perfectly wilted. Chop the spinach finely.
  • Preheat oven to 180C/160C fan-forced. Grease a 6-cup ovenproof dish. Layer 2 sheets of pasta on the base. Spoon 1/3 mince over pasta. Add half the spinach, 1/4 cup cheese, and 1/3 white sauce. Repeat layers. Finish with remaining pasta, mince, sauce, and cheese. Pour warm water over the top. Bake for 30-35 minutes until golden and pasta is tender. Let stand for 20 minutes before serving.
