Northern Italian-style chicken cacciatore with mushrooms, tomatoes, and onions in a flavorful tomato sauce.
Ingredients:
  • 1 (4 pound) whole chicken, cut into 4 pieces
  • 2 tablespoons olive oil
  • 1 (8 ounce) package mushrooms, chopped
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 0.5 cup dry white wine
  • 1 (14 ounce) can diced tomatoes
  • 0.5 cup chicken broth
  • 0.25 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes
Instructions:
  • Wash the chicken pieces and gently dry them.
  • In a large skillet over medium heat, sear chicken in oil until golden brown on each side, about 4 to 5 minutes. Transfer chicken to a plate.
  • Sauté mushrooms, onion, and celery in the pan drippings until soft for about 5 minutes. Then, add garlic and cook until fragrant for about 2 minutes.
  • Place the chicken back into the skillet. Pour in white wine and cook until most of it has evaporated, for about 2 to 3 minutes. Stir in diced tomatoes, chicken broth, parsley, oregano, red pepper flakes, salt, and black pepper. Cover and let it simmer until the chicken is fully cooked, approximately 30 minutes.
