Authentic Tuscan sausage from Northern Italy, perfect for any Italian recipe. Versatile - grill, fry, or boil to perfection.
Ingredients:
  • 4 pounds coarse ground pork shoulder
  • 1 pound coarse ground pork back fat
  • 2 tablespoons salt
  • 2 tablespoons white sugar
  • 1.5 teaspoons coarsely ground black pepper
  • 1 teaspoon garlic powder
  • 0.75 teaspoon ground mace
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground cayenne pepper
  • 0.5 cup ice water
  • 80 inches sausage casing, 1 1/2 inches wide
Instructions:
  • Grind salt, black pepper, and sugar until fine. In a large bowl, combine pork shoulder, back fat, garlic powder, mace, coriander, cayenne, and ice water. Then mix in the ground salt, pepper, and sugar. Wear gloves when mixing to keep the meat clean, and ensure the mixture stays cold.
  • Fill the casings with the sausage mixture and twist into 3-inch links. Alternatively, shape the sausage into patties or rolls if a stuffer is not available. Keep refrigerated for up to one week or freeze for up to six weeks.
