Northern Italian autumn minestrone soup with gluten-free pasta for a cozy evening.
Ingredients:
  • 1 cup dried cranberry beans
  • 1 medium carrot
  • 1 small yellow onion
  • 1 stalk celery
  • 0.5 small red bell pepper
  • 15 ounces potatoes, peeled and diced
  • 12 ounces diced carrots
  • 12 ounces zucchini, diced
  • 10 ounces fresh pumpkin, diced
  • 4 ounces diced yellow onion
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon minced fresh rosemary
  • 1 bay leaf
  • 8 cups vegetable broth, divided
  • 1 tablespoon salt
  • 6 ounces gluten-free elbow pasta
  • 1 fresh hot pepper, minced
  • 6 tablespoons finely grated Parmigiano-Reggiano cheese
Instructions:
  • In a large container, add cranberry beans and cover with cool water, allowing them to soak for 8 hours to overnight. Drain the beans before using.
  • Pulse carrot, yellow onion, celery, and red pepper in a food processor for a flavorful sofrito blend.
  • In a 7-quart pressure cooker set over medium-high heat, warm oil. Saute sofrito mixture until softened, about 3 to 5 minutes. Include soaked beans, potatoes, diced carrots, zucchini, pumpkin, and diced onion. Stir and cook until heated through, another 3 to 5 minutes. Add oregano, rosemary, and bay leaf. Mix well to coat vegetables with oil and seasonings.
  • Add enough flavorful broth to generously cover the vibrant vegetables. Seal the pressure cooker tightly, bringing it up to pressure for approximately 10 minutes. Let it cook for an extra 10 minutes once the first whistle sings.
  • Let pressure release naturally and uncover after 10 minutes. Taste and adjust seasoning if needed. Pour in more broth to cook the pasta. Bring to a boil and stir in pasta. Cook until al dente, about 8 minutes, occasionally stirring. Add more hot broth if necessary while cooking.
  • Serve the flavorful soup in bowls garnished with minced hot pepper and fragrant Parmigiano-Reggiano cheese.
