Not Your Mama's Rotel Dip

Elevated Rotel dip with extra seasonings, green onion, cilantro, and lime juice for a burst of flavor.
Ingredients:
  • 1 pound Mexican flavor processed cheese food (such as Velveeta® Mexican)
  • 1 (10 ounce) can diced tomatoes and green chilies (such as  RO-TEL® Original), with juice
  • 1 teaspoon taco seasoning, or to taste
  • 1/4 teaspoon cayenne, or to taste
  • 4 green onions, thinly sliced, white and green parts, divided
  • 1/3 to 1/2 cup chopped cilantro
  • 1/2 lime, juiced
  • Cilantro sprigs for garnish (optional)
Instructions:
  • Cut the Velveeta® Mexican into 1-inch cubes and place them in a microwave-safe dish that can hold 1 1/2 quarts. Microwave on 50% power for approximately 3 minutes.
  • Add RO-TEL® with the juice and microwave on 50% power for an additional 3 to 5 minutes. Stir until fully combined.
  • Sprinkle in taco seasoning and cayenne, then microwave on 50% power until the Velveeta is completely melted and all ingredients are well mixed, about 1 more minute.
  • Set aside 2 tablespoons of the green parts of green onions for garnish. Mix in the rest of the green onions, cilantro, and lime juice; microwave for an additional 1 minute at 50% power. The dip will have a thick consistency; to make it thinner, add milk or water, one tablespoon at a time, until desired consistency is reached.
  • If desired, top with the saved green onion tops and extra cilantro sprigs. Serve while warm.
