Delicious customizable muffins inspired by a family recipe, perfect for picky eaters.
Ingredients:
  • 2 cups (240g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1 teaspoon kosher salt (I use Diamond Crystal)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup milk
  • 1/3 cup neutral oil (like avocado or canola)
  • 1 large egg
Instructions:
  • Preheat your oven to 400°F, positioning a rack in the center. Grease each muffin pan cavity with cooking spray or butter.
  • Combine the dry ingredients: Whisk together the flour, sugar, baking powder, baking soda, salt, and any optional add-ins in a large bowl.
  • In a small bowl, combine milk, oil, and egg by whisking until well mixed. Pour the wet ingredients into the bowl with the flour mixture. Mix gently with a flexible spatula until no dry flour is visible, leaving the batter thick and slightly lumpy. Avoid overmixing to ensure tender muffins.
  • Baking Instructions: Fill each muffin cavity halfway with about 2 heaping tablespoons of batter. Bake in the center of the oven until the tops are lightly golden and firm when gently pressed, approximately 15 minutes. Cool muffins in the pan for 5 minutes, then transfer to a cooling rack.
