Indulge in luxurious chocolate ice cream infused with cocoa powder, dark chocolate, and a hint of espresso for an exceptional dessert experience.
Ingredients:
  • 4 egg yolks
  • 2 cups milk
  • 0.66666668653488 cup white sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 1 pinch salt
  • 3.5 ounces dark chocolate
  • 2 cups heavy whipping cream
Instructions:
  • In a saucepan over medium heat, gently warm milk, sugar, cocoa powder, espresso powder, and salt, stirring frequently until the milk is just about to simmer.
  • In a bowl, whisk egg yolks until creamy, then slowly incorporate about 1/2 cup of the warm milk mixture. Whisk until silky. Return the yolk mix to the saucepan and cook while stirring until thickened, approximately 5 minutes.
  • Melt dark chocolate in a microwave-safe bowl, stirring in 30-second intervals until smooth, for about 1 to 3 minutes.
  • Take the saucepan off the heat and blend the melted chocolate into the milk-egg mix. Pour the mixture into a large bowl, cover, and refrigerate for at least 4 hours, preferably overnight.
  • Combine cream and vanilla extract with the chilled chocolate mixture. Pour the mixture into an ice cream maker and freeze per the manufacturer's instructions until it reaches a "soft-serve" consistency. Transfer the ice cream to a lidded container, cover the surface with plastic wrap, and seal. For optimal results, freeze the ice cream for at least 2 hours or overnight before serving.
