Ingredients:
  • 50g (2 1/2 tbsp) butter, melted
  • 85g (1/2 cup) blanched almonds, roughly chopped
  • 55g (1/2 cup) walnut pieces, roughly chopped
  • 32.00 gm brown sugar
  • 1/2 tsp ground cardamom
  • 12 sheets filo pastry (Antoniou brand)
  • 57.20 gm honey
Instructions:
  • Preheat your oven to 180°C. Use a touch of melted butter to generously grease a baking tray. Mix together almonds, walnuts, sugar, and cardamom in a bowl.
  • Lay the filo pastry on a flat surface, covering it with a clean, damp tea towel. Brush one sheet with melted butter, layer another sheet on top, and brush with butter again. Add a third sheet, cut the stack into 3 strips crossways. Place a tablespoon of the nut mixture on one end of each strip. Fold in the sides, roll tightly to make cigar-shaped pastries, and place seam-side down on a greased tray. Brush the tops with butter. Repeat with the rest of the filo, butter, and filling.
  • Place the rolls in a preheated oven for 20-25 minutes until they turn golden. Once baked, generously drizzle honey over the rolls and let them rest for 5-10 minutes before serving.
