Homemade crunchy peanuts, just like street vendor quality, but better.
Ingredients:
  • 1 1/2 cups sugar
  • 2/3 cup water
  • 1 teaspoon vanilla bean paste or vanilla
  • 3 cups unsalted roasted peanuts
  • 1 teaspoon ground Saigon cinnamon
Instructions:
  • Place a cooking parchment paper in a 15x10x1-inch pan.
  • In a large cast iron skillet, whisk together sugar, water, and vanilla paste. Add peanuts and cook over medium heat until mixture rapidly boils, about 5 minutes. Stir occasionally until sugar crystallizes on peanuts and they appear dry and crusty.
  • Lower the heat to a gentle simmer, allowing the sugar to caramelize and create a luscious syrup at the bottom of the pan. Consistently stir and coat the peanuts with the syrup using a spoon until they achieve a beautiful golden brown color, which should take around 15 minutes.
  • Coat peanuts with cinnamon and mix well. Transfer peanuts to a pan, ensuring they are in a single layer and breaking up any large clumps. Allow to cool completely for about 1 hour. Store in an airtight container.
