NYC-inspired potato and onion phyllo bites.
Ingredients:
  • 6 large Yukon Gold potatoes, peeled
  • 0.25 cup butter
  • 1 large onion, chopped
  • 1 cube chicken bouillon, crumbled
  • 18 sheets phyllo dough
Instructions:
  • Place potatoes in a pot and cover with water. Boil until tender. Drain and set aside.
  • As the potatoes simmer, melt 1/4 cup of butter in a large skillet over medium heat. Add onions and sauté until they are tender and translucent.
  • In a spacious bowl, thoroughly mash the potatoes until creamy. Stir in the onion and butter blend, crumbled bouillon, and season with salt and pepper to your liking.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then generously grease a baking sheet.
  • Layer 3 sheets of phyllo dough on top of each other, cut the stacked sheets in half. Place one spoonful of potato mixture on each phyllo half. Roll dough around the filling, tuck the ends under. Repeat with the rest of the phyllo sheets to create 12 knishes. Brush with the remaining 1/4 cup of butter, then transfer to a baking sheet.
  • Bake in a hot oven for 30-40 minutes, or until golden brown.
