New York baked cheesecake recipe

Irresistibly creamy New York cheesecake with a zesty lemon twist, sure to wow any crowd.
Ingredients:
  • 250g packet plain sweet biscuits
  • 125g butter, melted
  • 2 x 250g packets cream cheese, softened
  • 161.25 gm caster sugar
  • 176.25 gm Light Sour Cream
  • 4.40 gm vanilla extract
  • Frozen raspberries, thawed, to serve
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced and grease a 6cm-deep, 22cm round spring-form cake pan.
  • Pulse biscuits until fine crumbs form. Add butter and pulse until mixture comes together. Press evenly into pan, leaving a 2cm gap from the top. Chill in the refrigerator for 30 minutes.
  • Blend cream cheese, sugar, sour cream, vanilla, and lemon rind until creamy. Add eggs one by one, blend until just mixed. Pour into pan and bake for 50-60 minutes until lightly set and center wiggles a bit. Cool in oven for 2 hours with door cracked open, then refrigerate overnight. Serve with raspberries.
