Indulge in a decadent New York baked cheesecake, a beloved classic.
Ingredients:
  • 250g digestive biscuits
  • 150g butter, melted
  • 500g cream cheese, at room temperature
  • 165g caster sugar
  • 1 tsp vanilla bean paste
  • 1 tsp lemon rind, finely grated
  • 21.00 gm lemon juice
  • 2 Free Range Eggs
  • 300g sour cream
Instructions:
  • Preheat your oven to 150C. Grease and line a 20cm springform pan.
  • Pulse biscuits in a food processor until finely crushed. Add butter and pulse until mixture is well combined. Press mixture into prepared pan using a straight-sided glass to create an even base and sides. Chill in the fridge for 30 minutes.
  • With an electric mixer, blend cream cheese and sugar until smooth in a bowl. Mix in flour, vanilla, lemon rind, and lemon juice until combined. Incorporate the eggs and beat until smooth. Finally, mix in the sour cream until just combined and then pour the mixture into the base.
  • Place the pan on a baking tray. Bake for 1 hour or until just set. Turn off the oven and let it cool for 2 hours with the door ajar. Chill for 3 hours before serving.
