Creamy German potato salad with a perfect balance of sweet and sour flavors. Easily scalable for a large group.
Ingredients:
  • 3 pounds potatoes, peeled and sliced
  • 0.5 cup chopped onion
  • 0.5 cup mayonnaise
  • 0.5 cup cider vinegar
  • 0.25 cup vegetable oil
  • 2 tablespoons white sugar
  • 2 tablespoons dried parsley
  • 2 teaspoons salt
  • ground black pepper to taste
Instructions:
  • In a large pot, simmer potatoes in water until tender, about 15 minutes. Drain and transfer to a large bowl. Stir in onions.
  • Combine mayonnaise, vinegar, oil, sugar, parsley, salt, and pepper in a large bowl. Fold in potatoes and onion gently. Rest for 1 hour to elevate flavors before serving.
