Zesty Mexican octopus salad with a refreshing mix of veggies: tomatoes, onions, cucumbers, and cilantro.
Ingredients:
  • One 2 pound octopus, cleaned
  • Salt
  • Several large sprigs of fresh oregano
  • Several large sprigs of fresh parsley
  • Several sprigs of fresh cilantro
  • 1 cup seeded, chopped cucumber (peeled if the peels are thick and bitter, otherwise leave them on)
  • 1/2 cup finely chopped red onion
  • 3 green onions, sliced, including some of the darker green ends
  • 1 fresh jalapeno, seeded and minced (test for heat, if really hot, only use a small amount)
  • 1/2 cup (loose) chopped fresh cilantro, including tender stems
  • 1/2 teaspoon dried oregano
  • 2 Tbsp lime juice
  • 2 Tbsp cider vinegar
  • 1/4 cup olive oil
  • 2 cups chopped, seeded tomatoes
Instructions:
  • Bring a pot of lightly salted water to a boil. Add the octopus and boil for 2 minutes. Remove octopus and let it cool on a sheet pan. Drain the water.
  • Trim the octopus into large pieces, removing any unwanted parts such as innards and beak. Arrange the octopus pieces on top of the herb bed.
  • Enhance flavors: Layer parsley, cilantro, and fresh oregano in a small Dutch oven or covered casserole. Arrange octopus pieces on the herb bed, cover, and bake at 250°F (120°C) for 1 3/4 hours until tender (vary time for different octopus sizes).
  • Prepare the baked octopus pieces: Transfer the octopus pieces to a sheet pan to cool. Once cooled, remove any unwanted gelatinous bits surrounding the octopus pieces and cut the meat into 1/2-inch pieces, aiming for about 2 cups of chopped octopus meat. Enjoy every flavorful part, including the tasty suction cup pieces.
  • Enhance flavors and chill: In a large, non-reactive bowl, mix chopped octopus with cucumbers, red onion, scallions, cilantro, dried oregano, and jalapeño. Also, add lime juice, cider vinegar, olive oil, and a sprinkle of salt. Gently stir to combine, cover, and chill for 2 hours or overnight, allowing the flavors to meld perfectly.
