Zesty octopus dish with coriander, garlic, and lime.
Ingredients:
  • 1kg cleaned baby octopus
  • 80ml olive oil
  • Zest and juice of 2 limes
  • 1 bunch coriander, chopped leaves and stems
  • 9.00 gm sugar
  • 2-3 cloves garlic, crushed
  • Salt & freshly ground pepper
  • Rocket leaves to serve, optional
Instructions:
  • In a large bowl, toss octopus with oil, lemon zest and juice, coriander, sugar, and garlic. Season generously with salt and pepper. Mix thoroughly, cover with plastic wrap, and chill in the fridge for several hours or overnight.
  • Preheat a chargrill pan or barbecue flat plate, lightly grease. Cook the octopus in batches for 5-10 minutes until it turns pink and the tentacles curl.
  • Present on a bed of arugula leaves and additional lime wedges.
