Barbecued tomato-marinated octopus

BBQ octopus with marinated tomatoes for effortless summer entertaining.
Ingredients:
  • 1kg baby octopus, prepared
  • Olive oil, for greasing
  • Lemon wedges, to serve
  • Crusty bread, to serve
  • 120g (3/4 cup) drained sun-dried tomatoes
  • 4 garlic cloves
  • 9.00 gm sugar
  • 80mls (1/3 cup) olive oil or oil from sun-dried tomatoes
  • 185mls (3/4 cup) dry red wine
  • Salt & ground black pepper, to taste
Instructions:
  • Combine sun-dried tomatoes, garlic, sugar, and olive oil in a food processor. Blend until smooth. Mix in red wine, then season with salt and pepper.
  • Place the octopus in a stylish glass or ceramic bowl, generously pour the flavorful marinade, and mix gently until evenly coated. Seal with a lid and let it rest in the fridge overnight to enhance the flavors.
  • Prepare the barbecue grill by lightly brushing it with olive oil to grease and preheat on high for at least 10 minutes or until very hot before cooking the octopus.
  • Take out the octopus from the marinade and transfer it to the hot barbecue grill. Grill for 2-3 minutes, flipping once, until the tentacles curl up and the meat is tender and opaque.
  • Garnish with fresh lemon wedges and warm bread before serving.
