Marinated barbecued zucchini and tomatoes

Summer perfection: Charred zucchini paired with sweet tomatoes, tangy marinade, and fragrant herbs.
Ingredients:
  • 63.70 gm extra virgin olive oil, divided
  • 40.00 ml red wine vinegar
  • 21.00 gm fresh lemon juice
  • 3 zucchini (600g total), cut diagonally into 1.5cm-thick slices
  • 200g tomato
  • 62.50 ml fresh basil leaves, torn
  • 62.50 ml fresh mint leaves, torn
Instructions:
  • Get your barbecue ready for some delicious medium-high heat. Combine 2 tablespoons of oil with vinegar, lemon juice, and garlic in a small bowl. Season with sea salt flakes and freshly ground black pepper, and set it aside for later.
  • Combine zucchini with 1 tablespoon of oil and season with salt in a bowl. Grill for 3 minutes per side until charred and tender. Transfer to a platter, drizzle with dressing, and let marinate at room temperature for 30 minutes. Enjoy!
  • Preheat the barbecue. Combine tomatoes with 1/2 tablespoon of oil and salt in a small bowl. Brush a barbecue tray or wire rack with oil and place on the barbecue. Grill tomatoes for 2 minutes until soft and some burst. Transfer tomatoes to a platter with zucchini, sprinkle with basil and mint, and serve.
