Marinated steak with fresh tomato sauce, ideal for summer grilling.
Ingredients:
  • 20.00 ml chopped thyme
  • 1 garlic clove, crushed
  • 8 x 200g Scotch fillet beef steaks
  • 800g ripe tomatoes
  • 9.20 gm olive oil
  • 2 garlic cloves, crushed
  • 2 tsp chopped thyme
  • Pinch of sugar, to taste
Instructions:
  • In a large shallow dish, mix together oil, thyme, and garlic. Add the steak and coat both sides with the mixture. Cover and refrigerate for at least 30 minutes, or overnight for best results.
  • Score a small cross in the skin of the tomatoes using a sharp knife. Place the tomatoes in a large heatproof bowl and cover them with boiling water. Let them stand for 2 minutes, then drain the water. Once the tomatoes are cool enough to handle, simply slip off the skins.
  • Halve the tomatoes and remove the seeds. Chop the flesh. Heat oil in a medium saucepan over medium heat. Sauté garlic for 30 seconds, then add the chopped tomatoes. Bring to a boil, then simmer for 10 minutes until thickened, stirring occasionally. Add thyme and season with sugar, salt, and pepper.
  • Take the steaks out of the fridge 20 minutes before cooking. Grill over medium-high heat on a preheated barbecue for approximately 4 minutes per side for a medium doneness. Rest for 5 minutes, then serve with homemade tomato sauce.
