Grill marinated lean steak with fresh veggies for a healthy and savory dish!
Ingredients:
  • 40.00 ml oregano leaves, torn
  • 125ml white wine vinegar
  • 700-800g beef rump steak, trimmed of fat
  • 2 large desiree potatoes, thickly sliced
  • 2 large red onions, thickly sliced
  • 250.00 ml wild rocket leaves
  • Lemon wedges, to serve
Instructions:
  • Mix fragrant oregano, pungent garlic, tangy vinegar, and rich oil to create a flavor-packed marinade. Put the steak in a dish and generously drizzle half of the marinade over it, ensuring it is thoroughly coated.
  • Refrigerate for a minimum of 1 hour, keeping the extra marinade separate for later use.
  • Blanch the potato in boiling, salted water until it starts to cook on the outside but remains firm inside (about 5 minutes). Drain and refresh. Combine the potato with the onion and reserved marinade in a bowl, gently coating them. Cover and let sit for 20 minutes.
  • Preheat a greased chargrill or barbecue over medium heat. Grill the potato and onion, coating generously with marinade, for 15 minutes until nicely charred. Set aside. Increase heat to high, brush with more oil, and grill the beef for 6-7 minutes per side for medium rare. Rest for 5 minutes, then slice.
  • Arrange the beef, potato, and onion on individual plates. Top with fresh rocket leaves and lemon wedges for a delightful presentation. Serve and enjoy!
