Elevate your home cooking with this gourmet barbecued steak and delicious corn mash.
Ingredients:
  • 4 beef T-bone steaks
  • 20.00 gm Cajun seasoning (see note)
  • 750g Desiree potatoes, peeled, cut into 4cm pieces
  • 63.13 gm light thickened cream
  • 300g can creamed corn
  • 1 long red chilli, deseeded, finely chopped
  • 1 birdseye red chilli, deseeded, finely chopped
  • 62.50 ml finely chopped chives
  • Olive oil cooking spray
  • Baby spinach leaves, to serve
Instructions:
  • Lay steaks on a plate and generously coat both sides with Cajun seasoning, pressing it in gently. Cover and chill in the fridge for 15 minutes.
  • **Add potatoes to a large saucepan, cover with cold water, and bring to a boil over medium heat. Reduce to medium-low, cover, and simmer for 20 minutes until tender. Drain, mash until smooth, then stir in cream, corn, chillies, chives, salt, and pepper until well combined.**
  • Heat up a barbecue plate or frying pan over medium-high heat. Coat the steaks on both sides with oil. Cook for 4 minutes per side for a medium doneness. Serve alongside corn mash and baby spinach.
