Beef marinated in zesty lime-sesame sauce, cooked and served in tortillas with fresh red leaf lettuce.
Ingredients:
  • 0.5 pound eye of round, thinly sliced
  • 0.25 cup lime juice
  • 1 tablespoon vegetable oil
  • 2 teaspoons toasted sesame seeds
  • 2 teaspoons reduced-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon finely chopped fresh ginger root
  • 4 leaves red leaf lettuce - rinsed, dried and torn
  • 4 (8 inch) flour tortillas
Instructions:
  • Place sliced beef in a shallow bowl. In a jar, mix lime juice, honey, oil, sesame seeds, soy sauce, sesame oil, and grated ginger. Shake well, then pour over beef. Marinate for 30 minutes.
  • Preheat a nonstick skillet until extremely hot. Add beef and marinade to the pan and cook on high heat until steak is uniformly browned. Use a slotted spoon to take out the beef. Simmer the marinade until it reduces by half, stirring often to avoid scorching, for about 5 minutes. Return steak slices to the reduced marinade, thoroughly mix, and let it cool slightly.
  • Lay out lettuce on each tortilla, then layer steak slices evenly. Gently fold bottom edge up by a third, and roll tightly from the side to wrap.
