Try this satisfying and vibrant global salad bursting with fresh vegetables.
Ingredients:
  • 600g beef rump steak
  • 1 quantity lime sesame dressing
  • 18.40 gm rice bran oil
  • 250g grape tomatoes, halved
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 2 long red chillies, halved, deseeded, sliced diagonally
  • 250.00 ml fresh mint leaves
  • 250.00 ml fresh coriander leaves
  • 250.00 ml fresh Thai basil leaves
  • 125.00 ml roasted unsalted peanuts, roughly chopped steamed rice, to serve
  • 42.00 gm lime juice
  • 24.00 gm brown sugar
  • 1 tsp sesame oil
  • 2cm piece fresh ginger, finely grated
Instructions:
  • Prepare the dressing by combining lime juice, fish sauce, brown sugar, sesame oil, and ginger in a jug. Whisk until the sugar is completely dissolved.
  • Place the beef in a glass or ceramic dish and generously drizzle half of the flavorful lime sesame dressing over it. Make sure to turn the beef to ensure it's fully coated in the delicious marinade. Cover the dish and let it chill in the refrigerator for 1 hour and 30 minutes, if you have the time.
  • Preheat a barbecue plate or chargrill over medium-high heat. Rub beef with oil. Grill for 2 minutes on each side for medium doneness, or until cooked to your preference. Remove to a plate, cover, and let it rest for 5 minutes. Slice thinly before serving.
  • Combine tomato, cucumber, chili, mint, coriander, basil, and beef in a large bowl. Mix well. Portion onto plates. Drizzle with remaining dressing, sprinkle with peanuts, and serve with rice.
