Ingredients:
  • 620g pkt Fresh baby potatoes with butter and herbs
  • 4 beef scotch fillet steaks
  • Salt & freshly ground pepper
  • 2 nectarines, finely chopped
  • 40.00 ml shredded fresh mint
  • 1 lime, zest removed, juiced
  • 9.20 gm olive oil
  • Mixed salad leaves, to serve
Instructions:
  • Preheat a barbecue plate over medium heat and a chargrill over medium-high heat.
  • Melt the butter from the potato packet on the barbeque plate. If the potatoes are large, halve or quarter them. Cook the potatoes on the barbeque for 15 minutes or until they are heated through and turn golden. Brush the steaks with oil, season with salt and pepper, and grill on the barbeque chargrill for 2-3 minutes on each side for a medium doneness or until cooked to your desired preference.
  • Combine the ripe nectarines with fresh mint, lime zest, and lime juice in a bowl, setting the flavorful mixture aside for later.
  • Plate the steak alongside crispy potatoes, garnished with salsa and fresh salad leaves.
