Steak with balsamic mushrooms

Ingredients:
  • 4 x 100g lean beef minute steaks
  • Olive oil cooking spray
  • 18.20 gm olive oil
  • 200g button mushrooms, sliced
  • 2 garlic cloves, finely chopped
  • 20.00 ml thyme leaves, finely chopped
  • 2 tsp balsamic vinegar
  • Crusty bread, to serve
  • Baby spinach, to serve
Instructions:
  • Prepare the steaks by lightly spraying both sides with oil and seasoning generously with salt and pepper. Heat a non-stick frying pan over medium-high heat until hot, then give it a light spray with oil. Cook the steaks for 1 minute on each side or until they reach your desired level of doneness. Transfer the steaks to a plate and cover with foil to keep warm.
  • In a hot frying pan, drizzle oil and add mushrooms, garlic, and thyme. Sauté for 3 minutes until mushrooms are tender. Pour in vinegar and mix well. Season with salt and pepper to taste.
  • Serve the steaks on plates and top them with the delicious mushroom mixture. Accompany with fresh baby spinach and bread for a delightful meal.
